To save repeating most of the information of the initial steps of creating a photogrammetry asset I will just post the screenshots in order below.

This time I skipped the lightroom step and went straight to reality capture as the lighting was already pretty flat due to the material of the egg shell it diffused lighting really well and I felt it unnecessary to go through lightroom first before trying reality capture.
Reality Capture Model
Again really happy with how this model turned out and that even skipping the lightroom step didn't cause me any issues. At this point I did notice some defects on the texture and I decided to try and rectify these as well as adding in a couple more steps with new software to get the best result.
I found tutorials on photogrammetry where a new step was introduced and that was to use the free texture delighting software that Agisoft provides, this is a very easy program to use and it produces nice flat lit textures from already created photogrammetry assets. It requires both the model and the texture in order to work, below are some screenshots of this process.

The first step is to load the file into Agisoft as seen above.

Then using their pen masking tool, the blue colour is used for removing shading and the yellow colour is used for removing highlights and cast shadows, you paint the areas where you can see the texture is being affected by highlights and shadows. Since it was my first time using this software I decided to just paint the whole egg to ensure all of the lighting and shadows was removed.
Then over on the right you can select what you would like to remove and Agisoft processes a new texture from this. And as you can see the results were fantastic and exactly what was needed in order to improve the assets further.
Texture Comparison
The left side was the original texture from reality capture and the right side was the new delit version from Agisoft. I am happy to have found this new process and will be incorporating it in future photogrammetry assets.
Substance Renders
Because this is by far my best photogrammetry asset I decided to load the textures into substance along with the normal map from reality capture and do a few renders so I can eventually put this into my ArtStation portfolio. The quality is really amazing and I am happy with the end result of this.
